No it's not just you...even the internships are really competitive. Since your school schedule doesn't allow you to have a full-time internship right now, I think your best bet would be to contact all the colleges in your area and just see if you can make a trip out there for a day to meet the staff, see the facilities and observe some workouts. While you're there, ask as many questions as you can. That will be a good way for you to start making some contacts in the field, and maybe they will be able to recommend you to someone for an internship. Try to visit as many schools as you can so that you can talk with several strength coaches. They will all have different training philosophies, and you'll be able to see how many different ways there are to train athletes. Good luck with everything, let me know what you end up doing!
If you are interested in collegiate strength and conditioning, your first step would definitely be to seek out an internship opportunity. The internships provide you with first hand knowledge of what goes on in a college weight room, and it also allows you to study under an experienced professional in the field. It is also important for making contacts and for getting references if you wish to take the next step in the strength and conditioning field in becoming a graduate assistant/assistant coach. As with anything, you only get out of the internships what you're willing to put in. Ask as many questions as you can and read, read, read anything you can get your hands on. Strength and conditioning is a really competitive career, and you always have to be looking for ways to better yourself. I have been really lucky to have been able to intern under some really, really knowledgeable strength coaches that I've learned an incredible amount from.
